Escabeche is often used as a garnish for Mexican food like tacos or enchiladas. But it can be served as an acidic compliment for just about anything. Try it as a fresh, healthy addition to a charcuterie board. Or eat it right out of the jar as a snack! Escabeche is commonly pickled with vinegar, but ours is lacto-fermented. This natural food preservation process creates a sour taste similar to vinegar, brings out the flavor of the ingredients, and is full of live probiotics that are good for your gut. The result is a fresh, tangy, slightly spicy carrot crunch.
